    “Jade Porcelain”, translated from the Chinese name “yu zhi ci”, literally reads “jade mutton-fat porcelain”. It is featured by the soft-white texture and luster thanks to the key raw material, the “yu zhi” clay, originated in Dehua, a well-known porcelain city in southern Fujian.

     

    We can enjoy tea in many ways with a Gaiwan: smelling, eye-viewing, and tasting. When you get a gaiwan of fine tea, slowly take up the cover and smell the inner side of the lid – nice fragrance! Then have a good look at the tea – clear, bright, and tender tea buds showing high-quality tea features.

    Bailing Gongfu SUPERIOR

    Bailin Gongfu SUPERIOR is made of spring buds and leaves harvested from the small-leaf Camellia Sinensis tree growing in the Tai Mu mountains, northeast of Fujian (where the White tea originates).

     

    It is a delicate black tea. Steeping for half a minute, the tea gives brilliant golden infusion color; its leaves neatly remain in the bottom. It tastes mellow and fruity, with a soft sweet aftertaste.

     

    The Chinese two words ”Gong Fu” mean ”lots of time and efforts”. The tea requires skilled and complex handwork including 12 processing procedures!

     

    Bailin Gongfu was firstly recorded in 1851 in Tsing dynasty ”Wu Yi Anthology” (武夷志). It has been appreciated as one of the best black teas in China since the last century.

    We select Bi Luo Chun from the historically protected Xishan hill beside the beautiful Taihu Lake in Jiangsu, east of China. The tea plantation, for centuries, has always been in a surrounding environment full of varieties of fruit trees, such as peach, pear, cherry, and date. Bi Luo Chun tea plants are naturally enriched by a fruity fragrance.

     

    Bi Luo Chun the three words vividly illustrate the feature of this green tea – it appears lively green, its tiny spring tea buds coiled up like delicate rings. It tastes subtle and refreshing, with a hint of fruity scent.

    Bi Luo Chun” is an honorable name given by the Tsing dynasty emperor Kangxi. In 1675, Kangxi traveled around Taihu Lake and the local governor Sung Hun contributed 50 g of a green tea. The emperor tried and was impressed by its fragrance, he thus asked about the tea’s name. The governor answered that this tea was called in the regional dialect as “Amazing Fragrance”. Kangxi thought for a while, took up his ink brush, and proudly wrote down three characters, 碧螺春 – Bi Luo Chun, which read “Green, Ring, Spring”.

    Our selection Bohea Souchong Lapsang black tea is a Chinese government’s protected “Origin of Production” product, also certificated by OCIA of the USA, and BCS of Germany, and JONA of Japan.

     

    Tips: Longan or Lapsang?

    Bohea Souchong has two styles classified by its flavours, Longan and Lapsang. Longan is the original style; Lapsang style was created two centuries later for export purpose. The Chinese mostly know and appreciate Longan flavour while the western world knows almost only about Lapsang.

     

    The tea is well-known for its pine-smoke aroma. The characteristic is achieved by a special fermentation process, which is combining smoke from the local pine trees into its oxidization procedures. More distinguishedly, the complex process results in a smooth and mellow flavour called “Longan” style, and later “Lapsang” style to fit in with the western market need. Comparatively, Lapsang flavour tends to be bolder, vibrant, filling your palate with stronger smoky intensity, white Longan tastes more mellow and smooth with the rich and at the same time balanced pine-smoke trait.

    Tips: Enshi Hairy Needle is rich in selenium thanks to the high-selenium soil in the mountains. It is a suitable warm drink for late autumn and cold winter.

     

    Enshi is rich in natural resources, 80 percent of its landscape is subtropical forest. The evergreen mountains provide the tea plantation ideal microclimate, its annual sunshine time is 1400-1500 hours and its frost-free period is about 220 days.
